Veggie Pizza

For the dough you can either buy a ready-made pizza base or mix, or if you’re feeling adventurous, make your own using the following recipe.

Ingredients

This will make 2 large or 4 individual pizzas:-

For the base

  • 600g Strong White Bread Flour plus extra for dusting – (We used our local Sibsey Trader Mill Strong White Flour - www.sibseytraderwindmill.co.uk)
  • ½ tsp Dried Yeast
  • 1 tsp Salt
  • 2 tbsp Olive Oil

For the filling

  • 250 ml Sour Cream
  • 250 g Cream Cheese
  • 1 tsp Dried Dill
  • 30 g Ranch Dressing 
  • 1 small Red Onion
  • 3 Radishes – thinly sliced
  • 1 Red Pepper, sliced
  • Broccoli Florets – sliced
  • 1 Carrot – grated

Cooking Instructions

For the base

  1. Put the flour, yeast and salt, (remember to keep the yeast and salt separate), in a large bowl. 
  2. Stir in 500 ml of slightly warm water and the oil.
  3. Combine the ingredients and you should end up with a wet dough that is lumpy.
  4. Cover the bowl with either a tea towel or oiled cling film and leave the dough to rise in a cool place for at least 6 hours or until doubled in size.
  5. When ready to cook bring the dough to room temperature.  Dust your work surface with plenty of flour and knead the dough incorporating enough flour to stop the dough being sticky.
  6. Roll the dough and lift onto your baking sheet, or pizza stone if you have one, and leave to rise for 10 minutes whilst you prepare your topping.

At this point you can either bake your pizza base without the topping on it for 12 – 18 minutes or until crisp, depending on the size of your pizza, then add the topping ingredients and eat the vegetables raw, or, bake the pizza base for 10 minutes, add the topping ingredients and bake for a further 5 minutes to just cook the vegetables through.

For the filling

  1. In a bowl combine the sour cream, cream cheese, dried dill and ranch dressing.
  2. If you’re going to eat the veggies raw allow your pizza base to cool then spread the creamed mixture on top and add the onion, carrot, broccoli, radish and peppers. Cover and chill. Once chilled cut into squares and serve.  

Alternatively if you want to cook your veggies and eat this warm after baking the pizza base for 10 minutes allow to cool slightly before spreading the creamed mixture on top and adding your veggies. Pop back into the oven for a further 5 minutes.
